  1. Gather and prep all of your ingredients.
  2. In a bowl, mix together the eggs and heavy cream. Set aside.
  3. Heat a pan over medium heat. Once hot, add the egg and evenly sprinkle the parmesan cheese into the egg mixture.
  4. Cook until just starting to crisp on the bottom side, then remove from the pan.
  5. Place toppings into the cheese tortilla while still warm, then wrap.
  6. As it cools, it should harden and become slightly crunchy. Enjoy!
