
Ingredients:
- 1/4 cup parmesan cheese, shredded
- 1 large egg
- 1 ounce bacon, cooked and chopped
- 1/4 medium avocado, sliced
- 1 tablespoon red onion, sliced
- 1 tablespoon cilantro
- 1 tablespoon low-carb salsa
Instructions:
- Gather and prep all of your ingredients.
- In a bowl, mix together the eggs and heavy cream. Set aside.
- Heat a pan over medium heat. Once hot, add the egg and evenly sprinkle the parmesan cheese into the egg mixture.
- Cook until just starting to crisp on the bottom side, then remove from the pan.
- Place toppings into the cheese tortilla while still warm, then wrap.
- As it cools, it should harden and become slightly crunchy. Enjoy!
